What "running hot or cold" actually means
An oven does not hold one steady temperature. It cycles. The burner or element heats past your setpoint, shuts off, coasts down, then fires again. A healthy oven swings maybe 20 to 30 degrees around the number you chose, and your recipes were written with that in mind. A problem oven swings much wider, or it centers on the wrong number entirely. A cake that browns on one side but stays wet in the middle is telling you something different than an oven that reads a flat 60 degrees cool everywhere. Notice which one you have. That one detail narrows the search fast.
Start with the cheap stuff: calibration and habits
Most ovens let you shift the calibration a set number of degrees in either direction, and owners bump this by accident all the time. Sometimes a previous homeowner set it and forgot. Your manual shows the button sequence, so check that first. Then look at how you cook. Opening the door to peek drops the cavity temperature quickly, and the oven spends the next several minutes catching up. Crowded racks block airflow. Dark metal pans brown faster than glass or light aluminum, and a pizza stone or steel plate left inside changes how the oven holds heat. None of that is a repair. All of it changes results.
The temperature sensor and the door seal
Inside the back wall of most electric ovens is a thin metal probe, and that is the sensor. The control board reads its resistance to decide when to fire. When the sensor drifts out of range, the oven confidently holds the wrong temperature, and that is a frequent cause of a steady 50 to 75 degree error. Now look at the door gasket, the rope-like seal around the opening. If it is cracked, flattened, or missing a chunk, hot air leaks out and the oven runs cool while cycling constantly. You can see and feel a bad gasket from outside, no tools needed.
Heating elements and controls
On an electric oven, a bake element that has blistered or broken in one spot heats unevenly, so one side of the pan cooks and the other does not. A bad element sometimes still glows, which fools people. Gas ovens use an igniter that weakens with age. A weak igniter takes too long to open the gas valve, the burner runs short cycles, and the cavity never gets where it should. Control boards and thermostats fail less often, but they do fail. These parts sit behind panels or near gas connections. Leave them to a technician, and do not open the back of the range.
Safe checks you can do right now
Put a standalone oven thermometer on the center rack and set 350. Wait a full 20 minutes past the preheat beep, then read it. Repeat at 425 and write both numbers down, because two data points tell us far more than one. Look at the door gasket in daylight. Press the door shut and check that it sits flush, with no gap at a corner. Confirm the racks are where your recipe expects them. That is the safe list. Skip anything that needs a screwdriver.
